Pumpkin Pancakes are simple and so delish! This amazing recipe is my favorite homemade breakfast. Hands down. Though pumpkin is typically thought of as a fall staple, in this recipe it’s light enough to make sense in summer as well. Added bonus? It’s super healthy. Bottom line? A must try, ASAP.
The details for the best Pumpkin Pancakes:
1 can organic pumpkin (not pumpkin filling)
1 1/2 cup milk
1 tablespoon olive oil
1 teaspoon vanilla extract
1 egg, beaten
2 cups pancake mix
2 1/2 teaspoons pumpkin pie spice mix
1 tablespoon dark brown sugar
walnuts or bananas (optional)
Step 1: Mix all ingredients together in a bowl.
Step 2: Transfer mixture to a pan. Medium heat setting. Volume will depend on your pancake size preference.
Step 3: If interested, add in nuts or bananas. Cook to consistency preference.
Step 4: Manja! Top with applesauce for a healty alternative to syrup.
