One of the resulting consequences of living in a city with a blossoming gastronomical scene is experiencing, first-hand, the evolution of food items you take for granted.  One such item, the deli sandwich, is, in no way, a glamorous affair, but the opportunity for depth that lies at its core is unparalleled.  A.M. Wine Shoppe represents the culinary progression taking hold of Washington, D.C.  With simplicity and attention to detail guiding day-to-day business, A.M. Wine Shoppe effortlessly juxtaposes flavors and sensations through their deli creations.

Walking into A.M. Wine Shoppe you cannot help to feel that you’ve walked into somewhere special.  Adorned with wood from wall to wall, the interior gives off a warm, comforting glow.  The assortment of wines plastering the walls never overwhelms, maintaining a sense of ambient openness.  The clear direction of interior design is an immediate statement of intent that is only further exemplified by the delicious fare.

Looking over the daily list of sandwich offerings I decided to try the Tipperary sandwich with Prosciutto Biellese, Cashel Irish Blue Cheese, and Fig Paste.  The sandwich is then lightly pressed, packing extravagant flavor into very little real estate.  The freshly baked baguette was warm to the touch and retained light crispy flakiness.  Below the outer shell, the bread was gooey, acting as a delicious sponge, soaking up the majestic combination that ensued.

The juxtaposition of flavor of the Tipperary is simple: savory saltiness exemplified by a smooth sugary underpinning.  The Prosciutto Biellese has a robust aroma – a funky, dark smell.  Seasoned with molasses and pepper, the thin slabs of rosy orange cured pork leg are marbleized with delicious fat, giving off a full-bodied porkiness that finishes with an earthy note.  The earthy and grassy notes evolve as you continue down to the Cashel Irish Blue Cheese.  The semi-firm cheese exudes a calculated salty smokiness, further advancing the pork by pushing to the forefront a parabolic peak of tanginess that teeters on being overwhelming.

It is at this exact moment that the fig paste comes in.  By far the most underappreciated aspect of the sandwich, the nuanced sweetness of the fig paste gives off a congruent contrast and feeds off the creamy blue cheese to deliver a flavor most reminiscent of a thick jam.  Within all of this, the prosciutto still maintained its own, never allowing you to forget the true star of the dish.  All of this made for an exceptional sandwich; engineered to perfection in an establishment that fully respects and, more importantly, understands its ingredients.
